Spinach Aubergine & chickpeas 

This is a very healthy mix of vegetables cooked in a really simple way that tastes heavenly!

What you need:

  • Any cooking oil (3 tbsp)
  • Mustard seeds
  • Cumin seeds
  • Curry leaves (optional)
  • Whole Garam masala (optional)
  • Bay leaf (fresh if available)
  • Onion (1 chopped)
  • Ginger Garlic paste  1 1/2 tsp
  • Cumin powder 1/2 tsp
  • Coriander powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Chicken masala (optional)
  • Aubergine (1 large chopped in cubes)
  • Spinach (fresh or frozen)
  • Tomatoes (2 chopped)
  • 1 Tin chickpeas

Preparation:

Add mustard seeds to hot oil once they start crackling add cumin seeds along with whole garam masala and curry leaves.

Now add onions and ginger garlic paste. Once the onion is slightly done add the turmeric, cumin, coriander powder and the chicken masala powder.

Before the dry masalas burn, add aubergine and spinach along with a tin of chickpeas. Now add tomatoes. If you are using frozen spinach you can add it straight away; there is no need to thaw it.

Let this mixture cook till the veggies are nicely cooked. Also, make sure the tomatoes are cooked completely.

Enjoy with roti or rice or in a sandwich!
P.S. I haven’t added any chilly as I prepared it for my little ones but it if you like it spicy you can add red chilly powder along with other masalas or green chilli with onions.
